The busy mum-of-three children under five years of age, wore a stunning cream and red Self Portrait dress, teamed with a Suzanne Ryan hat, and Zara bag and shoes.
"I am absolutely ecstatic, I can't believe it, it was totally unexpected," she said.
"The style here today is on another level, each one of us could have won it easily, I'm just absolutely thrilled to be bringing the Bollinger home to Ballymahon."
Kate secured a place in the grand finale on Wednesday, and chose to wear the same dress.
Suzanne Ryan millinery came to her rescue, and made a last minute hat for the final on Wednesday night.
"I changed it up last year, and I just said this is the dress I've won in and I mixed it up, changed my headpiece and put my hair back, and said if it was good enough to win on Wednesday, I might be lucky enough on Friday, and I was!".
Kate will jet off to Paris and attend an exclusive invitational screening of the highly anticipated 25th James Bond movie in April 2020.
In addition, the lucky Longford lady and a friend will enjoy a money can’t buy trip to the Bollinger Estate and Champagne Libraries, France.
This trip includes an overnight stay in the beautiful historic town of Reims, the capital of the Champagne region, Michelin dining and luxury overnight stay in Paris, the City of Light. As well as a year’s supply of Bollinger Champagne.
