Tracey Murphy from Dara Park in Newbridge scooped a bronze medal at the recent Sodexo Salon 18, the staff culinary competition run by the food and facilities management company for its staff in Ireland and Northern Ireland.
"Unlike the TV bake-offs, all the entries must be made in advance and brought to the Salon which was held at Cliff at Lyons in Kildare. There were five Baking Classes and Tracey, who is a trainee chef for Sodexo at P&G in Newbridge, took home the bronze medal in the hotly contested Gateau/Filled Sponge Class for her delicious chocolate creation, made of two layers of chocolate sponge with a vanilla sponge in the centre, buttercream filling throughout, covered with a chocolate glaze and topped off with edible roses," said the company.
Tracey said; “I’ve been working with Sodexo for nearly three years now and it’s my second time to enter the Salon, so I knew what the standard was like. I didn’t think I’d have a chance of a medal because I felt my cake was quite simple and plain compared to some of the other entries, so to say I was surprised was an understatement! Winning the bronze was amazing for team morale and some other staff members are thinking of entering next year.”
“I have always had an interest in baking and when I was younger I used to bake things like fairy cakes and muffins with my nanny and mother. I was a carer for my nanny for a few years before she passed away and she had Alzheimer’s, so we used to bake together to keep her mind occupied, all by hand with no electronics, and it gave us some lovely times together."
Sodexo Ireland provides food and facilities management services to clients in business and industry, education, financial services and healthcare. It employs approximately 3,700 people in 230 locations in Ireland and Northern Ireland and spent over €19 million on Irish food in 2017.
