What a popular little number is the pancake! It can be filled with a decadent array of fillings, from cream cheese to smoked chicken, avocado and sundried tomato. It is so versatile, it can be served for breakfast, lunch, and dinner, and of course, for a real tasty dessert with chocolate or cream with strawberries.
Once you have a good basic recipie you can prepare a real platter of fun for the family.
This recipe will make around 8-10 pancakes based on a 10 inch pan.
2 cups of flour, sifted 3 times
2 eggs beaten
2 tablespoons sugar
Buttermilk, half pint
30g melted butter
Honey to finish
Dissolve the sugar in the eggs.
Add to the flour, mix well. Next add your buttermilk and mix well until you have a syrup type of consistency. Then add your melted butter, mix well and leave to sit for 20 minutes.
In a thick bottomed pan on a good heat, add some sunflower oil. Wipe with some absorbent paper, then pour your mixture into the middle and coat the rest of the pan . Flip and then place onto a plate with a little sugar. Then repeat until the mixture is all used .
This is great served with lemon and butter and a welcome addition to our breakfast menu. Happy cooking - Chris
