Sundried tomato and cumin soup with crunchy croutons

Soup is food for the soul and this recipe contains so many little treasures.

The cumin is great for flavour and a great alternative to salt. It also gives you a real hit of Asian flavour.

The sundried tomatoes are jam-packed with flavour and garlic is great on so many levels, both for flavour and your health.

Here’s what you will need for a good family sized pot

INGREDIENTS:

1 cup of sundried tomatoes

2 cans of chopped tomatoes or 1 lb of fresh squishy tomatoes, which are great for soup .

2 tablespoons tomato purée

3 cloves of peeled garlic

2 teaspoons cumin seeds

2 red onions roughly chopped

1 pint chicken stock

1 pint vegetable stock

Good pinch of paprika

Dash of red wine

METHOD:

Place all the ingredients into a pot and bring to the boil .

Simmer for 45-50 mins and then liqudise.

You can add a little fresh tarragon to the pot at this stage if you wish.

Return the soup to the pot after liqudising and correct the seasoning and serve with some crunchy croutons and a little drizzle of rapeseed oil just to finish. It’s delicious.
